Note to self and others like me: please don’t do anything else while it’s in the oven. No, nothing. Your nuts will burn if you wash up or start making ice cream or anything else. If you’re lucky and your hazelnuts and almonds still had their skins on, then it’s rescuable. Thankfully. Rub the skins (ash) off with kitchen paper and let everyone know this batch is “extra toasty”.
4 ingredients I love. Sultanas, dates, figs, apricots. In many parts of the world dates are kind of like a seasonal staple I think. Btw, one more thing you (or anyone else making granola at home), could consider adding to the recipe is Ceylon Cinnamon. It's supposed to be a sweet variety of cinnamon. Although I can't say I'm a fan of spice in desserts. (Granola can be an appetizer, the main course and a dessert for me. - I mean why not).
Yeah likewise! And dried fruit too. One favourite was UK's Dorset Muesli that I used to get in the UAE. Loved the dried fruit in it.
And btw, there's like a whole variety of dates; And some varieties are just incredibly delightful. If you ever find yourself visiting the middle-east like the Emirates, Qatar, or Saudi Arabia, I really recommend you explore the variety they've got. And dates are kind of sold by the kilo or the box sometimes. They're that common and affordable. I'm sure you'll really love some of the varieties.

Ahh I'm in Australia, while we do have an increasing amount of corporate clinics I am working in a small clinic owned by our senior vet. Podcast sounds fun!
